EDWINNA’S RECIPE OF THE MONTH: PUMPKIN PANCAKES
Ingredients
- 2 cups of flour
- 2 table spoons of granulated sugar
- 4 teaspoons of baking powder
- 1 teaspoon of salt
- 1 teaspoon of cinnamon
- 1 1/2 cups of milk
- 1 cup of canned pumpkin
- 4 eggs, slightly beaten
- 1/4 cup of maragrine, melted
Instructions
1 Mix together dry ingredients.
2 Combine milk, eggs, margarine and pumpkin. Stir into dry ingredients until just blended.
3 Pour about 1/3 cup into a hot griddle. Cook until top bobbles and turn and cook other side.
